Executive Chef Touvai Poloniati runs a sustainability-minded steakhouse inside the sleek Horizon by SkyCity, polished enough for a business dinner and warm enough for a date night. Wagyu and Angus scotch fillet headline, with the Study of Beef offering a proper tasting flight for anyone who can't decide on just one cut. The Seafood Tower brings scampi, salmon caviar, sashimi, Pacific oysters and smoked salmon parfait to the table, while beef Wellington, crispy garlic bread and a miso hollandaise round out the comfort side of the menu. Timeless in the best sense, not the tired one.
